enter the desired percentage in the Target
Food Cost % field.
Click outside the window. The application displays the Confirmation screen.
Click Yes to change the target food cost.
To set the Target Food Cost indicator

Tip: Any
change to the target food cost will reflect on both the
screen and
screen. The menu and plate target food cost is always in sync.
